The Dome
George Street, New Town · Edinburgh · Steep Index 8.5/10 · Steep Pick

Edinburgh's grandest room for a cocktail, inside an 1847 banking hall that does not need to try very hard.
The Steep Index
Atmosphere scores 9.5 for one of Edinburgh's most spectacular interiors: Corinthian columns, marble bars, palms, and chandeliers across multiple rooms that somehow still feel like a bar rather than a museum. Cocktail quality at 8.8 for a programme that takes its espresso martini seriously and earns it. Solo at 8.5 because a single seat at the Front Bar gives you the full room without needing anyone else along. Value at 7.7 for cocktail prices that are honest given the setting. Staying at 8.0 for a venue that starts at morning tea and runs well past midnight.

Perfect for: impressing someone, first date, people watching, slow evening
The Space
An 1847 Commercial Bank of Scotland headquarters converted into one of the most beautiful rooms in Scotland. Corinthian columns, marble bars, palms, ceiling-high mirrors and 24-carat gold chandeliers split across distinct areas, with the Front Bar being the right call for a solo visit or a long drink.
The Pour
The espresso martini is the one to order and it holds up: cold, properly foamed, not too sweet, made by someone who has done it correctly rather than by rote. The wider cocktail list is creative without being overworked, and the champagne and whisky selections suit the room.
The espresso martini is not an afterthought here. It arrives cold, foamed correctly, balanced just right, and worth ordering twice.
The Vibe
George Street bars vary widely in how seriously they take themselves, but this one has the architecture to justify any pretension. Busy enough to people-watch, composed enough that a single drinker at the bar does not feel out of place.
The Verdict
The Dome is worth the price of a cocktail just to be in the room. Come for the espresso martini, stay for the afternoon tea, and sit at the bar where you can watch the whole place work.
