Tokyo has world-class coffee. It just does not open until mid-morning.

Issue 18

Most of the best cafes here are still dark at 7. One park-facing room is not, and its cold brew is worth the early start.

Land in Tokyo wide awake at 6:30 and you find out quickly that the city's coffee reputation runs on a later clock.

We checked the opening hours of every Tokyo cafe we have reviewed. About four in ten open by 8am, about two thirds by 9am, and roughly one in six is not open until 11am or later. In the other cities we cover, closer to two thirds are open by 8.

The one to set an alarm for

Eight is the most common opening time among the Tokyo cafes we have reviewed, so that part is fine. Seven is where it gets thin.

VERVE Coffee Roasters at Yoyogi Park opens at 7, every day. It is a clean room at the base of a residential building, facing the park, with communal tables through the middle and light that makes it feel wider than it is.

  • VERVE COFFEE ROASTERS YOYOGI PARK Steep Pick
Yoyogi, Shibuya · Tokyo · Steep Index 8.7/10

A California roaster that landed in Tokyo and immediately felt at home: park-facing, communal, and serving some of the most considered pour-over and cold brew in Shibuya.

The cold brew is the standout: correct acidity, long clean finish, and none of the bitterness that passes for cold brew in most places.

Order that, or the pour-over, and ask for a sample at the counter first. They offer free tastings before you order, which is the best menu recommendation system in the building. The park is visible from most seats, which slows the visit down in a good way.

Why Tokyo runs late

Likely a mix of habits. Many people drink coffee at home or grab a can or cup from a convenience store on the way to the station. Chains near the stations cover the commute. Traditional kissaten treat the morning as a sit-down meal of coffee and toast, known as morning service. And many specialty rooms are small, owner-run spaces built for a careful cup, not for volume.

If 7 is too early

Eight is a safe default, and a long list of our Steep Picks open then. If you want a few more early options, Fuglen Tokyo in Tomigaya also opens at 7, as do the VERVE shops at Yebisu Garden Place and NEWoMan Shinjuku.

The full piece, with the data and the list, is on the site: search for "Why do Tokyo cafes open so late" in our guides. Hours change, so check the venue's Instagram before you go.
