World Brewers Cup champion Tetsu Kasuya's subterranean gallery cafe, built around the 4:6 method he made famous. The space is genuinely unusual — half coffee bar, half art space — and the pour-over is the reason to come. Take the time to watch the preparation.

A tight, well-edited room in Minami-Aoyama that earns its Steep Pick without needing a concept. The coffee programme is clean and consistent, the pastry selection is better than it needs to be, and the neighbourhood outside gives you something to look at while you finish the last cup of the morning.
