PHILOCOFFEA is the project of Tetsu Kasuya, creator of the 4:6 method and one of the most decorated baristas in the world, and the filter programme here is the finest in the Omotesando area. The Space
The cafe sits below street level in a building tucked into Kita-Aoyama, and the descent into it feels intentional. Concrete and timber, the proportions of a small gallery, natural light filtering down from above. Around twenty seats, no noise asking anything of you. It is one of the more quietly considered interiors in a neighbourhood that has plenty of considered interiors.
The Coffee
PHILOCOFFEA is the project of Tetsu Kasuya, World Brewers Cup Champion and creator of the 4:6 method, and the filter coffee reflects that pedigree directly. The single origin selection rotates and ranges from the approachable to the genuinely rare. Order the tasting set if you want to understand what the sourcing is actually doing. The espresso and latte set is worth knowing about but the filters are the reason you are here.
The room breathes. The coffee gives you a reason to sit there and let it.
The Vibe
The staff know the provenance of every bean in the room and will share as much or as little as you want to know. The pace is unhurried and nobody is making you feel like a table that needs to turn. Solo visitors are well served. Bring something to read and plan to stay for at least two cups.
The Verdict
The best filter coffee you will find in Omotesando, in a room that earns the price of entry before the first sip. Come without an agenda and leave understanding why this particular corner of the Tokyo coffee scene matters.
