æ - ash — Tokyo

The SG Group's zero-waste cafe-bar in Jinnan, where Japan's three-time Barista Champion runs coffee by day and the Geisha Espression Martini lands with the same precision after dark.

The Steep Index

Coffee scores at the top for a reason: Taka Ishitani has won the Japan Barista Championship three times, and the house blend reflects exactly that level of obsession. The Geisha Espression Martini is not a novelty act. It earns its place. Atmosphere is cozy without being cramped. Solo works extremely well; the unhurried pace of service and the counter seating make it one of the better rooms in Jinnan for coming alone. Value is fair for a cocktail bar of this craft level. The coffee side especially punches above its price. Staying power is high: the format invites you to shift from cold brew to cocktail without the venue ever feeling like it changed around you.

  • Coffee / Drink Quality: 8.6/10
  • Atmosphere: 8.3/10
  • Solo-Friendliness: 8.7/10
  • Value: 7.8/10
  • Staying Power: 8.8/10
  • Overall: 8.4/10

Perfect for: working alone, impressing someone, slow evening, first date, espresso pilgrimage

The Space

A slim, considered room on the ground floor of the Kawamura Building, tucked far enough from the Shibuya noise to feel like a discovery. The denim accent wall is the detail that stays with you. Sustainability worn as texture rather than signage. Nothing here is decorative in the ordinary sense.

The Pour

Taka Ishitani's house blend, roasted in collaboration with Leaves Coffee and Obscura, is the foundation, and the cold brew shows what that foundation can do. The Geisha Espression Martini is the reason to stay into the evening: the Geisha bean's floral acidity does not get buried under the spirit, it leads through it. This is coffee treated the way most bars treat their top-shelf pour.

The Geisha Espression Martini is not a cocktail with coffee added. It is a coffee drink that has become something else entirely.

The Vibe

Quiet, warm, and surprisingly easy to settle into alone. The staff know exactly what is in the cup and why. Knowledgeable without making you feel interrogated about your order. By day it functions as a focused cafe. By evening it shifts to cocktails without the energy of the room changing underneath you. That transition is rarer than it sounds.

The Verdict

æ ash resolves an argument most venues avoid: whether a specialty cafe and a cocktail bar can coexist in the same room without either compromising. They can. Order the cold brew first. Order the Geisha Espression Martini when the sun goes down. Come back the next day and do it again.
