Cero Coffee Roasters

Cero Coffee Roasters — Madrid

A specialty roaster and takeout counter in Salamanca with solid single-origin sourcing and an owner who knows the supply chain from seed to cup. The cup on this visit did not quite match the conversation.

The Steep Index

The 7.5 coffee score reflects a latte that arrived without the definition you would expect from a roaster with this kind of origin programme on the shelf, sourcing from Colombia, Ethiopia, and Costa Rica with genuine intention. The owner's depth of knowledge and the quality of the bean selection push the overall upward. A second visit with a different brew method might shift the picture.

  • Coffee / Drink Quality: 7.5/10
  • Atmosphere: 7.5/10
  • Solo-Friendliness: 8.5/10
  • Value: 8.0/10
  • Staying Power: 8.0/10
  • Overall: 7.9/10

Perfect for: espresso pilgrimage, slow weekend

The Space

A compact roaster store and takeout counter on a quiet stretch of Calle de Alcántara in the Salamanca district, designed around the beans on the shelf rather than the seats. The physical experience is minimal and deliberate.

The Coffee

The latte arrived flat, without the character you would expect from a roaster sourcing this carefully from Huila, Sidamo, and Tarrazú. It is genuinely hard to reconcile the coffee in the cup with the origin knowledge the owner brings to the conversation about it.

The owner could tell you exactly where the bean came from and why it was chosen. The latte on this particular morning could not.

The Vibe

The owner carries a real depth of knowledge about his coffees, the kind that comes from time spent thinking seriously about the supply chain rather than just reading about it. The gap between that and what lands in the cup is the tension this place still has to close.

The Verdict

There is something worth returning to here and the sourcing programme earns the benefit of the doubt on a single visit. One morning and one drink is not enough to settle the question, and the right order at the right moment might tell a different story.
