chouette torréfacteur laboratoire
Miyasaka · Tokyo · Steep Index 8.0/10

A Michelin-trained chef's take on coffee roasting, squeezed into a six-seat counter beside the Setagaya tram line.
The Steep Index
The coffee is the reason to come, and it earns a high score — low-temperature roasting from a former three-star chef produces something noticeably different. Staying power is limited by the six-seat counter, but the solo experience is one of the better ones in western Tokyo.
- Coffee / Drink Quality: 8.7/10
- Atmosphere: 8.0/10
- Solo-Friendliness: 8.1/10
- Value: 7.7/10
- Staying Power: 7.6/10
- Overall: 8.0/10
Perfect for: working alone, slow weekend, espresso pilgrimage
The Space
Six counter seats, a Dutch roaster taking up meaningful real estate behind the bar, and a window that faces the Tokyu Setagaya tram line. It is a working laboratory first and a cafe second, and the space makes no effort to hide that.
The Coffee
Kenji Takayama trained at a three-star restaurant before he turned to coffee, and the low-temperature roasting method he developed here borrows directly from that kitchen philosophy — less heat stress on the bean, more of what makes it good in the first place. The result is a cup with clean natural sweetness and a brightness most Tokyo espresso bars are not chasing.
A former Michelin chef, a Dutch roaster behind the counter, and a tram that rattles past every few minutes. Setagaya has stranger combinations.
The Vibe
The Setagaya tram ticks past the window every few minutes, the counter fills with solo visitors nursing long blacks, and Takayama will talk through his beans if you want to hear it. Unhurried and genuinely local.
The Verdict
The hot dogs are made from scratch by the same person who roasts the coffee, which tells you everything about the level of care here. Come alone, take the counter, and let a tram or two go by.
