THE ROASTERY by NOZY COFFEE — Tokyo

The Nozy Coffee roastery in Jingumae runs one of the most serious single-origin programs on this stretch of Shibuya, where the in-house roasting is visible from every seat, the aroma does the selling, and the barista service is the one thing the score is still waiting on.

The Steep Index

Coffee scores high because the sourcing earns it. Single-origin beans only, rotated from farms across Ethiopia, Colombia, and further, all roasted in-house and available as espresso, Americano, or latte with your chosen bean. The aroma coming off the roasters is exactly what the name promises. Atmosphere is open and well-considered: a long central counter runs the length of the space, the roasters are visible from every seat, and the indoor-outdoor format gives the room room to breathe. Solo works well here. Counter seating is built for one and the pace of service encourages lingering. Value is fair for the caliber of what is in the cup. Staying is where the score softens. The roasting staff at the back are genuinely knowledgeable and easy to talk to. The barista service at the front runs colder, and at a cafe built around craft and hospitality to the bean, that gap is noticeable. The coffee is good enough to absorb it. Barely.

  • Coffee / Drink Quality: 9.0/10
  • Atmosphere: 8.5/10
  • Solo-Friendliness: 8.0/10
  • Value: 7.5/10
  • Staying Power: 7.5/10
  • Overall: 8.1/10

Perfect for: espresso pilgrimage, working alone, slow weekend, people watching

The Space

A long, open room in Reveur Jingumae, with a central counter that runs the full length of the cafe and the roasting operation visible at the back. Indoor counter seats and a terrace outside. The layout puts the process on display, which is exactly the right call when the sourcing is the story.

The Coffee

Single-origin beans only, sourced from farms across Ethiopia, Colombia, and rotating origins, all roasted in-house. Choose your bean first, then your format: espresso, Americano, or latte. The coffee is clean, nuanced, and worth taking your time with. Pair it with a financier or scone from the in-house pastry range. The soft-serve is worth noting if you visit on a warm afternoon.

The single-origin selection and in-house roasting make the argument before you have ordered. The aroma when you walk in closes it.

The Vibe

The roasting staff are the best reason to linger past your first cup. They know exactly what they are working with and will talk through the current rotation if you ask. The barista counter does not carry that same warmth, and the contrast between front and back of house is harder to ignore than it should be at this level. The Jingumae crowd is coffee-forward and unhurried. The terrace absorbs both well.

The Verdict

The Roastery earns its standing on the quality of the sourcing and the seriousness of the roasting. The barista service needs to catch up before the score reflects the full potential here. Come for the single-origin selection. Ask the roasters in the back what they would drink that day.
