Why do Tokyo cafes open so late? And where to get a proper coffee before 8am

Deep Dive · 3 min read

Tokyo has some of the best coffee in the world and a habit of not pouring it until mid-morning. Here is why, what our own hours data shows, and the few rooms open at 7.

Why do Tokyo cafes open so late? And where to get a proper coffee before 8am

If you land in Tokyo jet-lagged and wide awake at 6:30, the city's reputation for coffee does not help you much. A lot of the best cafes are still dark.

That is a real difference from New York, London or Melbourne, where a specialty cafe opening at 7 is ordinary. Here is how real the gap is, why it exists, and where to go.

What our hours data shows

We looked at the opening hours of every Tokyo cafe we have reviewed, using each cafe's earliest weekday opening time.

The picture is more nuanced than "Tokyo opens late". About four in ten open by 8am. About two thirds are open by 9am. And roughly one in six does not open until 11am or later.

In the other cities we cover, closer to two thirds open by 8am and nearly all by 9am. So Tokyo does run later, but 8am is actually the most common opening time among the cafes we have reviewed.

One caveat: these are cafes we chose to visit, not every cafe in the city. Treat it as a pattern, not a census.

Why Tokyo runs later

No single cause explains it, and none of this comes from the cafes themselves, so read it as likely rather than proven.

Coffee in Japan was never mainly a commuter ritual.
The early coffee is already sold, just not by the cafes.

Many people drink coffee at home, or pick up a can or a cup from a convenience store on the way to the station. Chains near the stations cover the commute. The independent cafe is built for a different job: a place you go to, not through.

Then there is the kissaten. Many traditional rooms treat the morning as a sit-down meal, with a coffee, toast and a boiled egg, a habit known as morning service. That is a table and a newspaper, not a takeaway cup.

Finally, many specialty cafes here are small, owner-run rooms made for a careful pour-over or a precise espresso, not for volume. An early shift is hard to justify when the commuters are elsewhere.

Where to go before 8am

The rooms we have reviewed that open at 7 are few, and several of the best are the larger, better-staffed ones.

Fuglen Tokyo in Tomigaya opens at 7 and doubles as a cocktail bar later. VERVE COFFEE ROASTERS at Yoyogi Park, Yebisu Garden Place and NEWoMan Shinjuku all open at 7, which makes them the easiest bet. SIDEWALK COFFEE ROASTERS in Shimokitazawa and Coffee Base MEGURO open at 7 too, and Bricolage bread & co. in Roppongi opens at 7 from Tuesday to Sunday.

Many more good rooms open at 8, including a long list of our Steep Picks, so if 7 is too early to plan around, 8 is a safe default.

The opportunity, honestly sized

A proper specialty cafe open at 7 would find customers: early risers, visitors on a different clock, remote workers. But the gap is narrower than it first looks, because 8 is already well served. The truly empty slot is 7, and mostly outside the big commuter hubs.

Hours change, and several of these shops adjust them seasonally, so check the venue's Instagram before you set an alarm.
