The Space
One by One Coffee Tokyo hides on the ground floor of a quiet residential building in Ebisu, a short walk from the station bustle. Inside there are just five counter seats facing the bar, nothing more.
The Coffee
The Ethiopia Sidama Arbegona Toh, natural process, second lot, came as a latte and it was the standout of the visit, round and clean with a genuine lavender note that carried through to the last sip. This is a shop built around rare Geisha coffee specifically, and that focus shows in how carefully the staff talk through each bean before it is poured.
The lavender note in the Ethiopia was not a stretch. It was just there, clear through the last sip.
The Vibe
The staff are unmistakably coffee people, warm and generous with what they know without ever pushing an upsell. Weekdays it sits close to empty, which turns the five seats into something closer to a private tasting than a queue.
The Verdict
For a room this small, One by One Coffee Tokyo delivers an outsized coffee experience, especially if rare Geisha lots are the reason you travel. Go on a quiet weekday, order whatever Ethiopia they are pouring, and let the lavender note do the rest of the talking.
